3 medium potatoes
1 small onion
1 clove garlic
1 tablespoon safflower oil1
2 tablespoons wholemeal breadcrumbs2
1/2 cup skim milk powder
1/2 cup grated tasty cheese
1/2 cup plain skim yoghurt
Grate potatoes, carrots and onion. Combine with crushed garlic. Lightly beat egg with oil, pour over grated vegetables, stir in chopped parsley,3 breadcrumbs and skim milk powder. Spread into well-greased pie dish and bake in moderate oven (190-200°C or 375-400°F) 30 minutes. Sprinkle with cheese, bake for a further 15 minutes.
Serve hot or cold topped with combined skim yoghurt and chopped shallots.

3Parsley isn't mentioned in the list of ingredients. I therefore end up reconstituting a tablespoon of dried parsley, but I'd like to try it one day with a bunch of fresh parsley!
